Coffee is the single largest source of antioxidants in the diet of most people in Western countries — exceeding fruits, vegetables, and tea in terms of antioxidant contribution per day. This is due to both the high antioxidant content (chlorogenic acids, caffeic acid, ferulic acid) and high daily consumption volume. A single cup provides more antioxidants than a typical serving of blueberries. These antioxidants reduce oxidative stress associated with ageing, cardiovascular disease, and neurodegeneration.
A 2014 meta-analysis of 28 prospective studies found that each additional cup of coffee per day was associated with a 6% lower risk of type 2 diabetes. Three cups/day corresponds to ~25% lower risk. The mechanisms include: chlorogenic acids reducing intestinal glucose absorption, improving insulin sensitivity, and reducing hepatic glucose production; caffeine improving fat oxidation; and magnesium improving insulin receptor function.
Coffee consumption is one of the most consistently observed environmental protective factors against Parkinson's disease. Multiple large studies find 32-60% lower Parkinson's risk in regular coffee drinkers. Caffeine directly blocks adenosine A2A receptors in the brain, which are involved in Parkinson's pathology. This mechanism is so strong that adenosine A2A receptor antagonists are being developed as potential Parkinson's treatments.
Regular coffee consumption is associated with 40% lower risk of liver cirrhosis and 15% lower risk of liver cancer per 2 cups/day. Coffee increases liver enzyme expression (CYP1A2) that processes and excretes toxins. It also reduces liver fibrosis by lowering transforming growth factor beta (TGF-β) — the primary driver of liver scarring. Even in people with pre-existing liver disease, coffee consumption significantly slows disease progression.
