- 1Use day-old cold rice — freshly cooked rice is too moist and makes fried rice sticky and clumped. Spread cooked rice on a tray and refrigerate overnight for best results.💡 Day-old rice is the single most important factor for great fried rice texture.
- 2Dice carrot finely. Mince garlic. Slice spring onions, separating white and green parts.
- 3Heat vegetable oil in a wok or large frying pan over high heat until smoking. Add garlic and white parts of spring onion. Stir-fry 30 seconds.
- 4Add carrot and peas. Stir-fry 2 minutes. Push vegetables to one side of the pan.
- 5Add cold rice to the pan. Press flat and let it sit untouched 1 minute to lightly crisp the bottom. Then stir-fry everything together 2–3 minutes.
- 6Push rice to the sides. Crack eggs into the centre, scramble quickly, then fold into the rice before fully set.
- 7Add soy sauce and sesame oil. Toss well. Top with green spring onion. Serve immediately.
