👨🍳 Instructions
- 1Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
- 2Cut broccoli into florets, slice zucchini into rounds, halve cherry tomatoes. Toss vegetables with ½ tbsp olive oil, salt and pepper. Spread on one half of the tray.
- 3Pat salmon dry. Place on the other half of the tray. Drizzle with remaining olive oil. Season with garlic powder, thyme, salt, pepper and lemon zest.💡 Patting salmon dry before seasoning helps it form a better crust in the oven.
- 4Roast 18–20 minutes until salmon flakes easily with a fork and vegetables are tender with light caramelisation on edges.
- 5Squeeze fresh lemon juice over salmon before serving. One tray, one wash up.
